After dissolving the sample, the team purified its protein constituents and analysed them with liquid chromatography and mass spectrometry. They indicated a dairy product made from cow milk with either sheep or goat milk.

The study found signs of bacteria potentially causing the deadly disease brucellosis, caught through the ingestion of unpasteurized dairy products.

If the researchers' suspicions are confirmed, the 3,200-year-old sample will also provide the world's oldest reported biomolecular evidence of brucellosis. One of those broken jars contained a solidified whitish mass inside along with a canvas fabric that could have covered the jar originally.

The cheese in question was discovered among a large cache of broken clay jars inside the tomb of Ptahmes, former mayor of Memphis (ancient Egypt, not Tennessee) and a high-ranking official during the reigns of pharaohs Seti I and Ramesses II.

Researchers have found what they believe to be the oldest cheese in the world inside the tomb of a 13th century BC mayor of Memphis in ancient Egypt.

A team of experts, led by chemical scientists Enrico Greco from the University of Catania, conducted a thorough analysis on what this whitish mass was.

Dr Greco said: 'The interactions for thousands of years with the strong alkaline environment of the incorporating soil rich in sodium carbonate and the desertic conditions did not prevent the identification of specific peptide markers which showed high stability under these stressing conditions'. "The constituting material was a dairy product obtained by mixing sheep or goat and cow milk". Nearby, they found a scrap of canvas fabric that was likely used to preserve and cover the ancient blob of food.

'The characteristic of the canvas made it unsuitable for containing liquid or, in general, non solid-materials.

However, it did take quite a bit of work to reach the determination that the white substance found in the Egyptian tomb was actually cheese.
